Black Bean Soup

Before you begin:  Add to bowl and wash beans 3 times each. Soak beans in cold water overnight on the counter.

Ingredients

  • 1 Pound Black Beans (dried beans)
  • 1/4 Cup of Olive Oil
  • 1/2 Cup Butter
  • Onion
  • Green Onion
  • Red, Yellow, Green Bell Peppers
  • Garlic
  • Rotel Tomatoes
  • Black Pepper
  • Cayenne Pepper
  • Garlic Powder
  • Italian Seasoning
  • Paprika
  • Ground Cumin
  • 1 Tablespoon Brown Sugar

Directions

  1. Clean and soak Black Beans
  2. Cook with 3 cups of water per pound, medium heat
  3. Use 1/4 cup oil, defoam
  4. Boil 30 to 35 minutes, until beans begin to soften
  5. As beans soften, add 1/2 cup butter
  6. Saute onions, bell peppers and garlic
  7. Add to beans
  8. Add Rotel tomatoes
  9. Add seasonings
  10. Cook until lightly creamed
